Rabbit's Heat-Wave Pasta

Ingredients

2 cups dried pasta (macaroni or shells)
5 heaping tablespoons whole milk yoghurt
1/4 pound finely grated cheddar cheese
1 cup coarsely grated carrots

Directions

Early in the morning cook the pasta and drain it. Immediately (while the pasta is still hot) put the pasta in a mixing bowl and spread the cheese over it followed by the yoghurt. Stir a bit until blended. Stir in the grated carrots. Set it aside to cool to room temperature and then put it in the refrigerator. Have it for lunch when the temperature starts to get unbearable. To really satisfy the rabbit in you, wrap a dollop of this mixture in a large leaf of lettuce, or throw in a few herbed French olives to satisfy the gourmet.

Annie's® brand macaroni and cheese mixes (the ones with the rabbit on the box) and a hot day helped inspire this recipe. Of course you can just put the grated carrots in a batch of Annie's® macaroni and cheese, and you'll have something similar. It might even taste better.

A couple tablespoons of olive oil can be substituted for the yoghurt with reasonable results. You can also get special "Surfin' the Net" pasta from The Pasta Shoppe, LLC. It looks like little computer monitors.
