Ingredients

sliced, chopped and grated potatoes, onions, apples and cheese in piles and vessels with bottle of oil in the background

4 cups potatoes thinly sliced
2 cups chopped onions
1 apple, cored and chopped
1 1/2 cups grated jack or cheddar cheese
1/2 cup oil

Directions

Fry the potatoes in a covered skillet using the oil at high temperature for 5 minutes. Stir up and fry for another 5 minutes. Stir in the onions and fry for another 5 minutes. Stir in the apple and fry for another 5 minutes. Turn off the burner and sprinkle the cheese over the top. The potatoes should be tender and easily pierced with a fork when you turn off the burner, but don't fry them until they turn to mush. The cooking length for the apples isn't too critical, so cut it short if your creation is turning into mashed-potato-looking glop.

I ate something like this at the Charlemont Inn in Charlemont, MA. I've never been able to make it as well though. In the summer I sometimes substitute a large tomato for the apple. Cabbage, collard greens, green beans and/or mushrooms make an interesting addition. Greens can be put in to steam once the potatoes have been stirred up for the first time and then mixed in with the onions. Mushrooms can go in later, with the onions or the apple or tomato.
