Sauerkraut Burrito

Ingredients

wrapper (flour tortilla or other wrap)
2 parts grated jack or cheddar cheese
1 part chopped green peppers
1 part chopped tomatoes
1 part salsa
2 parts cooked pinto beans
2 parts sauerkraut (shredded pickled cabbage)

Directions

Wrap the ingredients and cook them at 350°F for half an hour. You can substitute 1 part onion for the sauerkraut, but then you'll just have a run-of-the-mill burrito and miss the whole point of the recipe. Chopped summer squash is also an interesting addition.

This recipe is another vindication of the adage "when in doubt, add sauerkraut". Many people underappreciate the versatility of sauerkraut. It can be used in many places where you would otherwise be using olives, onions or pickles. Not that you shouldn't use these other things, but sometimes a change is nice.

The next natural step would be to consider the proverb "if your décor feels like it's missing something, it's probably a cuckoo clock", but I'll save that discussion for another time and place.
